Watercress recipes

Watercress is a plant that grows very quickly (hence the name Celtic Beruron ) along ditches, streams , canals , wells and permanently flooded land. The stems and leaves are edible and are used to vorzubereitet various dishes such as salads , soups and others. The taste is reminiscent of mustard, slightly spicy. This plant , which is good for any diet, and is a great help in slimming diets , diabetes , tuberculosis , rheumatism, to treat gout .

Watercress soup
ingredients

125 grams of sunflower oil
1 kg . Chicken wings (optional)
1 kg . Onion in columns

2 fresh lemon peel
1 tablespoon white pepper in grain,

200 gr spinach leaves,
75 gr watercress leaves,
6 liters of water ,
120 gr salt.

1 Clean the chicken wings , cut them so that there are only two different segments.

2 Heat the fat, in this case, the sunflower oil, and fry the chicken wings , which we are then taken out of the pan when they are browned on both sides correctly . It is important not to remove the wings before, once they are in direct contact with hot fat . Then cut the onion into slices.

3 When the onion is slightly yellow, it 's time to add the leeks and celery, finely chopped siemlich . Last add the garlic , peeled, because we just use because of the aroma , and then remove again . All fry for 1 minute.

4 The rest of the garrison ie aromatic lemon zest, thyme , bay leaf and pepper. Season with salt and pepper to taste , keep on high heat until it boils . Remove foam and cook for 60 minutes over medium heat. Then let stand for 30 minutes. Leave , sieving and , if possible, degrease fat cooling.

Watercress Dressing
ingredients

1 1/ 2 cups homemade yogurt without sugar and flavor
3/4 cup watercress leaves
1 tablespoon dried dill
Juice of one lemon
1/3 onion, chopped
Salt and pepper to taste.

1 All the ingredients mix . Ready!

Watercress salad with honey
ingredients

1 bag of fresh cress
100 grams of walnuts
50 grams of raisins
For the honey vinaigrette :

3 tablespoons olive oil
1 tablespoon honey ( the honey of rosemary if possible)
1 tablespoon vinegar
salt
mixed pepper
preparation

1 Wash it the watercress well and let them drain.

2 Prepare before the vinaigrette with honey and vinegar. Enter both ingredients in a bowl and stir it vigorously to dissolve the honey. Please add the oil and mix it well until the sauce is emulsified.

3 Place the watercress in a beautiful bowl , pour over them with nuts and raisins. Finally, pour the honey vinaigrette over it.

Vegetarian watercress soup
 ingredients

2 bunches of watercress
2 potatoes
1 large onion
4 tbsp olive oil
4 tablespoons wheat germ
4 cups vegetable broth
Sea salt , to taste
Freshly ground pepper , to taste
preparation

1 Put the oil in a pan and sauté the onion over low heat.

2 The peeled potatoes to give the washed and chopped watercress with the broth cook for about 20 minutes.

3 Season with salt and pepper to taste. Then put in the blender . To serve , sprinkle the wheat germ over it, and serve hot.
